okay.. i found this realy awsome recpie for high carb cute pumpkin cake that was made in a round bunt cake it was soo cool i wana make it for thanks giving but i want ot make one that i can eat .. and that all the diabetics in my family can eat w/ out going over board..

I'm horrible on trying to come up w/ my own recpies.. but.. i might give it a whirl.. it was just so cute.. they used a cream cheese frosting and added orange food coloring and put it on the bunt cake .. and put some kind of cone on the top for the stem.. it was realy kewl!

Here's a link to a pumpkin bread recipe. If you used low carb icing on it you could pass it off as a cake. It looks easy.

okay.. i guess im going to be to picky about this recipe.. see have problems finding some of these ingrediants.. like oat flour.. and vital wheat glutent.. and whey protein
i have thought about winging it.. and kinda just doing a toss together recipe.. all tho .. bakeing is so much diffrent than cooking.. i was going to do a trial run and see how it turns out.. if it is SO/SO.. i will take it to work and try to get them to eat it.. if its not very good ill crumble it up and ohh figure something to do w/ it... gona have to go get me a bunt cake pan..

Maybe you could substitute flax meal for the oat flour but I don't know if there's a sub for vital wheat gluten. Here's another link to a pumpkin bread recipe. MAybe you'll have better luck with it.

i think i can handle that second one.. im wondering how well soy protein powder can be subsituted for that whey protien.. .. its just something i alredy have.. i seldom bake so.. i hate buying a ton of other things... thanks Rob for takeing the time to search me up something. i was looking over a few.. i also found one that was a pumkin pound cake.. lc.. okay .. when you make a bunt cake its to be dence but moist correct? ahhh ill figure something out LOL..

I read the first recipe "bread29" and it calls for 20 drops of liquid sweetener.
What is the dry equivalent? I do not have a liquid sweetener, but only bulk
Splenda and some of the little packets...
Help.

what recipe did you want.. the one for the pumpkin cake... well see its called pumpkin cake beacuse it looks like a pumpkin.. but all they did was use a bunt cake and regualr cake mix.. it was my kraft food recipe for halloween.. i thought how festive for thanksgiving.. to make it out of pumpkin and decorate the same w/ creamcheese frosting.. here is the link that game me the idea.. but there is no help w/ that recipe.. its useing box cake mix.. i wana tastey pumpkin cake that i can pour in to my bunt cake pan and have a beautifull pumkin when im done.. http://www.kraftfoods.com/main.aspx?...ecipe_id=65453

Gilley, that cake looks adorable! I doubt that most LC cake recipes would rise enough to look as round as the cake in the picture. But, if you made two cakes, possibly you could use one for the bottom and flip the other over for the top.

Well, I tried this recipe this weekend. URL below.
I had no liquid sweetener and I added 1 extra cup Splenda... yes I know the carbs.. the carbs... but the taste is very good, especially if you let the bread sit overnight. For me I think I would add a few walnuts and just a bit more Splenda...

I am going to get some liquid Splenda and try it again, but this pumpkin bread would lend itself to be used as a pumpkin roll base... If I remember right, the filling is sweetened cream cheese. That would work as a real treat... one recipe called for a bit of vanilla, so DaVinci Vanilla Syrup would work.

ok 1 recipe down.. more to try.. i tried the most simple one today since im still getting over a terrible head cold i wasnt in the mood to be in the kitchen long.. I'm not to impressed w/ this one.. it was the one that just basicly called for eggs, cannd pumkin, vanila, almond flour, splenda, and bakeing powder (i think that was it..) to much almond flour in something i think leads to a grainy texture.. my little one loves it tho so.. lol guess he will be haveing a healthy snack for a few days.. i dont think ill make any kind of frosting for it just beacuse he dont need any extra fat.. in his diet.. nor suggar.. so ill keep it simple.. he was calling it cookie so.. he can think it is a cookie..

okay i found one.. i substitued soy protein isolate for the whey protein.. and i added a little vital wheat gluten.. its perfict.. im probly going to have to double.. or tripple the recipe to make it fill a bunt pan.. but.. its good.. only thing is im haveing trouble haveing it release from the pan.. and in a bunt pan that isnt a good thing.. any tips?
i made it in a cake pan.. and it is about as high as thin brownies.. it was to be made in a loaf pan.. or a 8x8 pan.. i think my pan was 9x13 also the change i made was i used pumkin pie spice beacuse i did not have all those difrent spices.. and didnt have ginger.. (unless it is in that pie spice..) and i used veg oil beacuse only olive oil i have is extra v.. hrmm.. what else.. i used a 15oz can of pumkin.. and 1 extra egg.. (since i added the vital wheat gluten.. and more pumkin.. its very tasty and wonderfull texture.. will be great w/ some cream cheese frosting.. and low in carbs too!

Dense Spicy
Pumpkin Bread


Ingredients:
3/4 cup vanilla whey protein powder
1/8 cup "Just Whites" (egg white powder)
1 Tablespoon baking powder
1 teaspoon cinnamon
1/2 teaspoon ground clove
1/2 teaspoon nutmeg
1/8 teaspoon mace
1/8 teaspoon ginger
2/3 cup Splenda
1/8 teaspoon salt
1 12-ounce can pumpkin
1/4 cup heavy cream
3 large eggs
1/8 cup water
3 Tablespoons light olive oil or sweet almond oil
